another wonderful Taiwanese food! Italian word "vermicelli" is used to indicate different sorts of long pasta shapes from different parts of the world, this kind of vermicelli is cooked like a stew with fresh oysters.

               


Legend has that Oyster vermicelli was served to peasants, since it needs to be cooked in a large portion, how not to over-cook it becomes an art. That's why the oyster vermicelli has this tan-brownish look, it was gained during the steaming process which caramelizes the sugars in the dough allowing it to be cooked for longer periods without breaking down. Nowadays, Oyster vermicelli is only seen in Taiwan, it has become a street-side delight for all walks of life.


The interesting thing about Oyster vermicelli is that they are serve 24/7, students and workers have them for breakfast, office workers grab them for a quick lunch and the rest of the day we have them whenever we like, for me, it’s a perfect mid-night snack in cold winter. When you visit Taiwan, you can find them in the ally of main-streets, and all night or morning markets.
