Braised pork rice 滷肉飯 !!

                        What the….. Food, Braised pork rice (滷肉飯)~      

               
                                                             
is considered to be the most representative dish for local basic food.
The most suitable kind of local rice is picked out to go with braised pork and its sauce, the steam rice absorbed all essence in to it, and together they make an invincible team.
                                                                                                                   
Braising food is mentioned often in this blog cuz we do often braise all kind of food with different ingredients. It’s the same idea as “stew” in the western terms, sometimes we braise food with natural herbs and other times with only soy sauce and rice wine, if you were to count, it might be tens and thousands of combinations of ingredients we braise with. As mentioned in braised dishes (滷味) it was originally a way to preserve food back in our history.
Braised pork rice is to be found everywhere, it’s an everyday street food which made us hard to define which category to put it in, but braised pork rice is a must try in Taiwan as far as I am concerned.
